| This casserole goes with many menus and is truly well loved and well used. |

Butter |

Onion, Minced |

| 1 cup |

Uncooked Rice |

Green Bell Pepper, Chopped |
|
| 1 can |
|
Sliced Mushrooms, Stems and Pieces |

| 1 can |
|
Consomme |
|
| 1 Tbs |
|
Soy Sauce |
|
| 2/3 cup |
|
Water |

Saute the butter, onion, rice and green pepper together for 10 minutes, until rice browns. |

Add mushrooms, with liquid, the consomme, soy sauce and water. Bring to a boil. |

Put in an ungreased 2 or 2-1/2 quart casserole, cover, and bake at 400° for 25 minutes, until liquid is absorbed. |
