Coffee Cake

 
 
 
Only scrumptious!
 
1 cup    Butter or margarine  
2 cups    Sugar  
2   Eggs  
1 cup    Sour cream  
1 tsp    Vanilla  
2 cups    Sifted cake flour  
1 tsp    Baking powder  
¼ tsp    Salt  
Topping:  
1 cup    Chopped nuts  
2 Tbs    Brown sugar  
2 tbs    Cinnamon  
 
1 Cream together butter and sugar.
2 Add eggs, beating well.
3 Add sour cream and vanilla.
4 Fold in flour, baking powder and salt.
5 Grease and flour a 9" x 13" pan. Pour ½ of batter into pan.
6 Combine topping ingredients. Top batter with half of topping mix.
7 Add rest of batter and top with remaining topping mix.
8 Bake at 300° for 55 to 60 minutes. May take a bit longer, so be sure to test until toothpick comes out clean!
 
 Cooking Tips
I believe it could be halved and baked in an 8" x 8" pan - adjust cooking time accordingly.
