There used to be a little restaurant in Wailuku Maui called Charlene's Cafe; "Joe's Special" was one of the many things the offered.

Wailuku Maui is actually a very unusual town, I'm not a "Maui boy" even though my parents lived upcountry for well over twenty years.

What's upcountry?

Ignoring a very obvious set-up for some unacceptable humor, upcountry refers to that area that is essentially the slopes of Haleakala. My folks lived in a town called Kula, with an elevation ranging between 2,000 to 3,000 feet. They say that your temperature drops 10 degrees for every 1,000 feet in elevation, so the 20 degree temperature drop makes Kula an excellent place to call home. It's nice living in a place that has both the warmth and beauty of Hawaii along with "mainland temperatures".

 
 
 
This is a very easy dish to prepare and is absolutely wonderful.
 
4 - 6   Eggs  
1 -2 cups    Doritos  
1 cup    Shredded Jack Cheese  
1 Tbs    Butter  
  Herdez green salsa  
 
1 Melt butter in medium saucepan.
2 Whip eggs to scramble; add to saucepan.
3 As eggs begin to set, add Doritos. Cook until eggs are set.
4 Turn off heat; add Jack Cheese and serve.
5 Top with Herdez green sauce.
