Mahogany Yams

 
 
 
Mike and Jan make this every year for Thanksgiving.
 
1/3 cup    Chopped pecans  
2 lbs    Yams  
2 Tbs    Butter or margarine  
½ cup    Curacoa or O.J concentrate (either one)  
¼ cup    Light brown sugar  
1½ Tbs    Cocoa  
1 tsp    Grated lemon peel  
½ tsp    Cinnamon  
¼ tsp    Nutmeg  
 
1 Blanch nuts (ouch) with butter or margarine.
2 Peel and slice (1/4" pieces) yams.
3 Cook with balance of margarine 5 - 7 minutes. Turn and cook additional 5 - 7 minutes.
4 Combine balance of ingredients and pour over yams, cooking uncovered 15 minutes until done.
