Skewered Chicken with Peanut Sauce

boned and skinned chicken breasts. cut into long strips about 1/3 inch wide

Combine all ingredients and marinade chicken for 30 minutes - overnight, Be sure to make the Peanut Sauce recipe which accompanies this dish.

Peanut Sauce Recipe (for Skewered Chicken)

coconut milk

peanut butter

1/4

cup

fresh lemon juice

Soy sauce

Tbs

brown sugar

garlic clove, crushed

grated fresh ginger root

tsp

red pepper flakes

Cup

Heavy cream

In a medium sauce pan over medium heat, combine all the ingredients except the heavy cream. Continue to heat, stirring constantly, until the sauce is as thick as heavy cream, about 10 minutes. Add into a food processor and puree briefly, then add heavy cream and blend until smooth.
