Lilikoi Butter

lilikoi puree or juice (unsweetened)

sugar

eggs, beaten

Melt butter over medium heat. In a large bowl measure 4 cups sugar, add eggs, mix well. Add lilikoi juice slowly, stirring constantly. Bring to a full rolling boil still at medium heat to eggs don't coddle.

Cool for 5-10 minutes for desired consistency
